Recipe for granola bars

Our family likes granola bars, particularly Chococonut and Peanut Choco. Since we go through one box just for everyone to get one bar, but most of us usually want a second one, I have been looking for a good recipe to make my own.




Chococonut

INGREDIENTS

2 cups quick oats
3/4 cup packed brown sugar
3/4 cup flaked coconut (just dried, no sugar added)
1/4 teaspoon ground cinnamon
1 cup whole-wheat pastry flour (or all-purpose)
3/4 cup chocolate chips
3/4 teaspoon salt
1/2 cup honey
1 egg, beaten
1/2 cup coconut oil
1 teaspoon vanilla extract

Peanut Choco

INGREDIENTS

2 cups quick oats
3/4 cup packed brown sugar
3/4 cup dry-roasted peanuts, unsalted
1/4 teaspoon ground cinnamon
1 cup whole-wheat pastry flour (or all-purpose)
3/4 cup chocolate chips
3/4 teaspoon salt (omit if using salted peanuts)
1/2 cup honey
1 egg, beaten
1/2 cup peanut butter
1 teaspoon vanilla extract





DIRECTIONS FOR BOTH VERSIONS


1. Preheat the oven to 325 degrees F (160 degrees C). Generously grease a 9x13 inch baking pan.
2. In a large bowl, mix together the oats, brown sugar, coconut/peanuts, cinnamon, flour, chocolate chips and salt. Make a well in the center, and pour in the honey, egg, coconut oil/peanut butter and vanilla. Mix well. Pat the mixture evenly into the prepared pan.
3. Bake for 20 to 25 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Each batch makes about 18 granola bars. Enjoy!

To store, wrap bars individually in Saran wrap, and store in the freezer in one large freezer bag.

This is a great snack to have on hand for outings, sack lunches, or last minute quick breakfasts.

    I did have a question-what hymnal do you use in your church and home worship singing. I saw some of your videos from your church and I wondered which one you use and recommend.

  2. I like all kinds of granola and cereal bars as well. I tried to make some about a year ago after seeing that you had tried. They turned out ok. I'm not exactly a great domestic queen!!

    Since another question was just asked. Can I ask if you will direct me to a chart that shows what you guys believe and teach about the end times/last days?? I saw some guys mention in on your husbands sight. pre-trib vs. whatever else. I grew up with hearing a lot of this and it all really scared me. Even as a young adult, if I didn't see my parents a few times, the thought would go through my head, "did the rapture happen and I didn't go", etc., all that stuff. Can you please point me to a place that says what you guys believe? I'd like to compare it to all that I was taught. I tried to learn some more from reading on my own a couple years ago, but it seems what you all teach may be entirely different. I know you are busy, but if you could help me out, I'd appreciate it!!

    These look really good! I'd love to give them a try, but I have a question. In the directions you list "coconut oil/peanut butter", but coconut oil is not listed in the ingredients. What is the measurement, and can you substitute a different type of oil? Thanks!

    we do NOT subscribe to the pre-trip nonsense. The Bible makes it clear that when Christ returns and we "meet him in the air", "every eye shall see him". Nobody will be wondering "Where did everybody go?" because the sun and moon will already have been darkened, and a half hour after our rapture, God will begin to pour out his wrath.     the directions are for both kinds of granola bars that I give ingredients for. One uses coconut oil, the other peanut butter. You can use regular oil (like sunflower, safflower, etc.) for the coconut bars, but the PB and chocolate ones really need peanut butter and no other substitute.

  5. yummy, just made the coconut ones, but used raisins instead of choc chips and maple sirup as i had no honey, they came out a bit sticky but very YUMMY. thanks for sharing the recipes.

  6. Thanks for the site. I'll look it up. It has taken me long enough to try to understand what I think I was taught, and then it seemed like I was hearing something different.   7. I made the Choconut bars yesterday...yummy, my hubby loved them! I froze half the recipe for when I go into labour (we are having a homebirth) in case someone wants a snack!

  8. Thank you soooo much! I made the peanut ones last night. I used sage honey (my favorite), organic peanut butter, and soft white wheat flour. I was out of peanuts, so I chopped up brazil nuts, but it is fine. I have been wanting a granola bar recipe for snacks, but haven't found one that I like a lot- until now. I like how these hold together. This is going to be a new snack staple here for sure. I'll try the coconut ones as soon as I get more organic dried coconut. I haven't tried a ton of recipes to compare these to, but I think they are great. They hold together well without being sticky, the composition of ingredients and texture is good, and it's an opportunity to use some of my extra flour from the freezer (extra from milling flour for other recipes). The amount of salt is just perfect for that "sweet-salty" yumminess. I refuse to buy any regular store-bought snacks, and I wouldn't be able to find granola bars that meet my approval anywhere within an hour of my home (they'd cost too much to buy regularly anyway). So I need recipes like this! Thank you again!

  9. Absolutely delicious! I made a batch about an hour ago, and they turned out great! Def. will be something I'm going to try again...this will save tons of money for me! (College kid :)
