Caesar Salad Dressing

This is the recipe for my favorite homemade creamy Caesar salad dressing. This recipe makes a lot, so you may want to only make half or even quarter of it, as it tastes best fresh.

1 cup mayonnaise
1 tbsp lemon juice
1 tsp Worcestershire sauce
1 clove of garlic, minced
1/4 tsp salt
1/8 tsp pepper
1/2 cup Parmesan cheese
1 tbsp milk or half and half

Mix all ingredients together until well blended.

For younger kids, you can "turn down the heat" by using less garlic. Personally, we prefer more of it.

    Here's a great homemade ranch dressing recipes, if you're interested:

    1-2 cloves garlic
    Coarse salt
    1/4 cup flat-leaf parsley
    2 tbsp. fresh chives
    3/4 cup mayonnaise
    1/2 cup sour cream
    Buttermilk (or regular milk), as needed

    Mince the garlic, then sprinkle with salt and mash into a paste. Chop all herbs finely.

    Wisk all the ingredients together in a bowl. Chill for several hours, then wisk in a bit of milk/buttermilk before serving to thin it out, if needed.

  2. I have found a new love in caesar salad dressing...God knows it isn't that great for me, but it's definitely my new favorite. I've never made my own, but I may have to give this a try. And I'm with you, you really can't put too much garlic in anything for my tastes!
